Philippe cooks with organic, pesticide-free olive oil from his own olive estate and does not use butter. The pastries are homemade, with no added sugar, and available with or without gluten. Cow's milk and lactose-free milk are also available. Philippe sources his charcuterie directly from a local slaughterhouse to guarantee the traceability of the products he serves to his customers. Everything is done in the interest of the customer and with respect for the environment." With an extra cost, all-you-can-eat Provençal buffet breakfast is available every morning.
